Bianca's Creamy Spinach Soup



        Creamy Spinach Soup
 
I was looking through the fridge tonight to see what to cook myself for dinner and I noticed that some of the spinach I had bought for making my green smoothies was starting to wilt! So I decided to whip together a creamy spinach soup. I had a look on the net at some recipes but nothing suited the ingredients I had in my fridge. So I decided to create my own recipe. Now Ben has always been a wiz at whipping up amazing healthy meals without needing a single recipe, and like I remember my dad doing as a child, has the innate ability to throw in and mix ingredients together that work! I on the other hand have not been blessed with this gift. However, I’m working on it! And tonight I surprised myself with this freehand recipe I created.
 
        Bianca’s Creamy Spinach Soup


 
Ingredients
 
·       1 tbls of olive oil
·       2 cloves of garlic (crushed)
·       1 x inch of fresh ginger
·       2 x chopped onions (small)
·       450kg of organic spinach
·       2 x organic celery stalks (trimmed and chopped)
·       4 cups of chopped broccoli
·       2-3 x carrots (peeled and ends chopped off)
·       4-5 fresh mint leaves
·       A handful of coriander
·       2-3L of vegetable broth (or vegetable stock)
·       1 x cup of cream
·       Sea salt and ground pepper, to taste
  
Method
 
1.    Chop up the spinach, broccoli, celery, carrot and onion and place in bowls
2.    Next using a large pot heat the oil, then add the onion, garlic and ginger and mix on medium heat till the onion is golden
3.    Next add the spinach, broccoli, carrot and celery and stir until the spinach starts to wilt.
4.    Add the vegetable broth (or 2L of water with 2 vegetable stock cubes), along with the coriander and mint to the pot
5.    Bring to the boil and then simmer covered on medium heat till the vegetables have softened
6.    Add some salt and pepper to taste
7.    Next using a blender blend up the soup into a puree then return to the pot. Then add the cream and stir through

If you like grains, like I do, add some cooked basmati rice to the middle of your soup and garnish with some mint leaves.
  
I love soups in winter! They are easy to make and there are so many different vegetables and herbs you can use to create a range of tasty and healthy soups. During the next few months as I start cooking up my soups I’ll be sharing a few more of my favourites here on my blog, to help keep you warm and cosy through the winter.
