Chocolate Cuddles

It’s tough to find many things in life that make you feel quite the same way as chocolate does. Chocolate can make you feel happy; it can comfort you and has the ability to make you feel all special inside. The regular chocolate we all love buying from the supermarket is packed with refined sugar and artificial flavours which, although temporally can make us feel great, does also have the ability to make us feel flat and craving more than we should consume. So with these thoughts in mind I wondered how I could create the lovely feelings chocolate can bring us without the unloved side effects. 
 
Since it is winter and the days have grown quite cold and wet I thought that I would create a yummy hot chocolate to comfort me through those rainy days (tonight being one of those days!).  
 
I started looking through my cupboard for some healthy but naturally sweet ingredients I could use to create my delicious hot chocolate. Soon my kitchen bench was covered with ingredients; I pulled out dates, almonds and cashews (activated), coconut oil, desiccated coconut, cocoa, some dark chocolate, honey and some almond milk. I then got out my trusty food processor and randomly began to add them to the hot chocolate mix till presto I created a yummy and guilt free hot chocolate........   
 
Here is my yummy hot chocolate recipe.......
  

Chocolate Cuddles


Ingredients
·      Handful almonds
·      Handful cashews
·      6 x dates
·      1 Tbsp cocoa powder
·      1 Tbsp dark chocolate
·      ½ tsp coconut oil
·      1 Tbsp organic honey
·      Desiccated coconut to sprinkle on top
·      4 cups of almond milk 

Method
1.   Blend the activated almonds and cashews in a food processor till it creates a powder. Then add dates, cocoa powder, coconut oil and blend till mixed together
2.   Next place nut and cocoa mixture to a medium sized saucepan and add almond milk
3.   Heat mixture on medium heat without boiling. Add dark chocolate and honey and stir through
4.   Pour mixture into a mug and sprinkle with desiccated coconut
5.   Drink while hot!
  
Note: Feel free to adjust the flavours as you go to suit your taste.....
